Egg Off

Yesterday evening Howard and I were standing around the kitchen island discussing what to have for dinner.  We couldn't come to a consensus on dinner but we did decide to make egg salad for today's lunch.  He put the pot of water on the stove to boil and it dawned on me that we should have a competition.  This is probably due to the fact that his brother had spent the last 3 days with us and everything had become a competition. 

Who can throw a football into the pool?
Who can kick a football into the pool?
Who can kick a soccer ball into the pool?
Who can chip a golf ball into the pool?
Who can win at racketball off the barn siding?
Who can win at beer pong?
Who can take the pong ball and bounce it off 3 walls and into the cup?
Who can win at NHL '94 on Super Nintendo on the 13 inch TV in the basement?

So I said to Howard, "Let's have an EGG OFF!"  And of course, he was game.

I'm a huge fan of Deviled Eggs.  So I figure why not make a Deviled Egg Salad.  We used a lot of the same ingredients but they came out completely different.  And guess who won? 

ME!

He even admitted it.  And because it was really that good, it became our dinner.  His became his lunch today.  And for me, I could care less that I didn't get a lunch out of the deal because all that matters was I WON.  And at something related to cooking.

Here is the recipe. 

Deviled Egg Salad


6 hard-boiled eggs, chopped finely
1 tsp. brown spicy mustard
2 tbsp. real mayonnaise
1 tsp. white vinegar
1 tsp. sugar
1/8 tsp. all purpose seasoning salt
1/8 tsp. ground pepper
1 tsp. sweet pickle relish
1 dash Soy Sauce
1/8 tsp. cayenne pepper

Mix all ingredients together. 
Makes about 2 cups.
